So another Easter Recipe to sink your teeth in. I love hot cross buns and they are just the perfect mixture of sweet and savoury. I confess I will often just buy them from the local supermarket because it is easier, however if you are feeling adventurous then try this recipe!
I’m unsure whether hot cross buns are worldwide food, or just in the UK but they always remind me of Easter. My dad makes the family hot cross buns with bacon in them and they are just delicious.
I will say now this is a time consuming recipe and I loved making them, as it was the first time I’ve ever done it, but god if you have something to do like LIFE then do not commit.
– 500g strong white bread flour
– 10g salt
– 75g sugar
– 10g yeast
– 40g unsalted butter, softened
– 2 eggs, beaten
– 120ml milk, warmed
– 120ml cool water
– 100g sultanas
– 60g mixed peel
– Finely grated zest of 2 oranges
– 1/2 apple, cored and chopped
– 2 tsp ground cinnamon
For the crosses:
– 75g plain flour
– 75ml water
For the glaze
– 75g Apricot Jam
1. In a large mixing bowl, add the flour and then the sugar and salt in one side of the bowl. On the other side of the bowl add the yeast.
2. Add butter, eggs, milk and half the water and then using your hands mix the ingredients to form a dough. You may need to add some more water, until all the flour is picked up from the bowl. You should have a dough that is soft, sticky but not soggy.
3. Empty the dough onto a well floured surface and begin to knead the dough for 5-10 minutes.
4. In a lightly oiled bowl, add the dough and cover with a damp tea towel. Place in a warm place until the dough has doubled in size. This took for 2-3 hours for mine to double.
5. Tip the dough back onto a well floured surface and scatter the sultanas, orange zest, mixed peel, apple and cinnamon onto the dough. Knead these into the dough until evenly incorporated.
6. Place back into a lightly oiled bowl and cover with a tea towel. Place in a warm place until the dough has doubled in size.
7. When risen, divide the dough into 12 pieces and roll into balls. Place the balls onto a tray that is covered with baking parchment and ensure they are evenly spread out.
8. Place in a plastic bag (I used a Tesco bag for life) and place in a warm place for an hour for the dough to rise.
9. Pre heat the oven to 200 degrees.
10. For the crosses, mix the flour and water together in a bowl. Grab a a piping bag with a small nozzle and pipe crosses onto the buns. My mixture was a bit watery so my crosses came out a bit homemade so be careful with the water to flour ratio.
11. Bake for 15-20 minutes until golden brown. Keep an eye on them in the oven so they do not burn. Leave to cool for 5 minutes.
12. Heat up apricot jam and brush them over the buns to give them a glaze. Leave to cool before enjoying with friends.
